100 gm dark chocolate, chopped 1 cup (220 gm) dark brown sugar 1/2 cup (125gm) orange juice rind from 2 oranges 2 tbspn Grand Marnier 40 gm plain flour 3 tbspn almond meal 2 egg yolks 4 egg whites
Combine chocolate, sugar, orange juice and rind into a suacepan and heat until dissolved. Cool.
Whisk in egg yolks, flour and almond meal. Beat the egg whites until soft peaks form, and fold into the cake mix.
Pour into a prepared 20 cm baking tin and bake in a moderate (180°C) oven for 35-40 minutes until just set. Cake should still be soft in the middle.
Cool in the tin - the cake will shrink slightly as it cools. Invert onto a serving plate and serve alone or with strawberries.
