8 tablespoons flour 8 tablespoons breadcrumbs 60 gms butter 1 large cooking apple 6 tablespoons mixed dried fruit 2 teaspoons mixed spice 4 tablespoons sugar 1 teaspoon bicarb soda 240 ml milk
Mix the flour and breadcrumbs and rub in the butter. Chop the apple, unpeeled, into 1 cm pieces, and mix it with the other fruit, spices and sugar in with the flour and crumbs. Disolve the bicarbonate in a little of the milk and thoroughly stir it into the fruit mixture. Then mix in enough milk to make a slack dough.
Put the mixture into a pudding bowl. Cover the bowl with a piece of foil, leaving a pleat for expansion in the centre, and tie it down securely with string. Steam for at least 2 hours. If doing this in a saucepan, the water should be about half way up the bowl and kept at a light simmer.
