275 gms flour 1/2 teaspoons baking powder 1 teaspoon ground ginger 175 gms ground almonds 1/2 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/4 teaspoon ground nutmeg 2 eggs 50 gms finely chopped candied orange peel 125 gms caster sugar 350 ml honey 90 ml milkLine a swiss roll tin with greaseproof paper, brush lightly with oil and put aside.
In a bowl, sieve the flour, baking powder and spices together and stir in the almond and chopped peel. Break the eggs into another bowl, add the sugar and whisk until the mixture is light and thick, leaving a trail when the whisk is lifted. Whisk in the honey and milk followed by the flour mixture.
Pour the batter into the prepared tin. Bake in a preheated oven at 200°C. for 15-20 minutes. Ice while still hot with 175 grams icing sugar mixed with 1/2 teaspoon almond essence, one teaspoon lemon juice and water to mix. Cut into bars to serve.
