Apricot Oat Bars

Base:

1 cup plain flour			1/3 cup sugar
1/2 cup oats				125gm butter

Topping:

1/3 cup self-raising flour		1 cup light brown sugar
1 cup coconut				200gm chopped dried apricots
2 eggs
Preheat oven to 180°C. Line or grease 18 cm. by 28 cm. tin.

Cover chopped apricots with hot water for five minutes, then drain.

Melt butter and combine with remaining base ingredients, then press into the prepared tin and bake in a moderate oven for 15 minutes.

Beat eggs well and combine with remaining topping ingredients.

Remove the base from the oven, spread it with the topping, and return it to the oven for 20 - 25 minutes

Cool then cut into bars.
