Kaye and Geoff's Recipes - Biscuits


Choc Chip and Walnut Biscotti

250gm unbleached self-raising flour		175gm brown sugar
pinch of salt					2 tspn vanilla extract
rind from 2 oranges				100gm chocolate chips or broken dark chocolate
1 cup walnuts					2 eggs
Preheat oven to 180°C. Line a baking sheet.

Put all the ingredients in a large bowl and mix until combined and dough forms. Mix will look a bit dry at first, but eventually the flour will absorb into the eggs. If necessary, add only one to two tablespoons of water or orange juice to combine.

Roll the mixture into two log shapes and place onto a lined baking tray. Bake in a moderate oven for 15-20 minutes until golden and firm.

Remove from the oven and cool slightly. When cool enough to handle, slice at an angle into one cm. pieces and arrange back onto the baking sheet. Return to the oven and bake for a further 8-10 minutes, then remove.

Cool and serve with coffee.
